Oatmeal Cookies

I've never been able to find a good oatmeal cookie recipe. I've tried several, and they all turned out too flat. So I took my favorite chocolate chip cookie recipe and adapted it to be oatmeal cookies. They are chewy and delicious and NOT flat! :)
Oatmeal Cookies
1 c. butter (2 sticks)
1/4 c. sugar
3/4 c. brown sugar
1 t. vanilla
2 eggs
1 (3.4 oz.) box instant vanilla pudding
2 t. cinnamon
1 t. baking soda
2 c. flour
2 c. oats
1-2 c. butterscotch chips*

Combine butter, sugars, vanilla, eggs and dry pudding. Mix well. Add cinnamon and soda and mix well again. Add flour and oats and mix until well incorporated. Stir in butterscotch chips. Heat oven to 375 F. Drop dough with a cookie scoop onto an ungreased cookie sheet and bake for 8-10 minutes.

*You could use chocolate chips, raisins (or other dried fruit), nuts, or any combination of whatever you want!
