Sneaky Halloween Deviled Eggs

Flipping through cookbooks is very relaxing for me. Make fun if you will, but I love it. So I went to the library the other day and checked out some cookbooks. Among them was Deceptively Delicious (which I referred to in this post.) Anywho, the whole concept is trying to get kids to eat more nutritious food by sneaking veggies into recipes! It's very intriguing. I saw a recipe in the book for deviled eggs and I thought I'd give it a try, but I tweaked it a little. These deviled eggs are "sneaky" because hidden inside are veggies! Sweet potatoes to be exact so it makes them festive and orange.
Sneaky Halloween Deviled Eggs
6-8 boiled eggs
1 medium baked sweet potato
couple spoonfuls mayonnaise
drizzle of mustard
salt

Peel boiled eggs and cut them in half. Remove yolks and put them in a bowl and place whites on a plate.
To the yolks, add sweet potato, mayonnaise, mustard, and a bit of salt. Mix well until smooth and creamy.
Place a spoonful of yolk mixture into each egg white. Serve with paprika on top if you want it to look more fancy. Keep leftovers in the fridge so that you can make a Halloween egg salad sandwich the next day!
I mashed 2 deviled eggs and spread it onto warm, buttered sour dough bread. Mmmmmmm! I think the idea of sneaking veggies in recipes is a brilliant idea. I might share some more "sneaky" recipes in the future. Enjoy!

Apple "Cupcakes"

I saw these on Polly's blog and I just had to try them. Aren't they the cutest little snack ever? They would be so fun for a kid's party or a family get together! So cute and so healthy.
Apple "Cupcakes"
1 apple
nut butter (I used chocolate almond butter)
assorted fruit (peaches, berries, bananas, etc.)
mashed sweet potato or pumpkin
cinnamon
whipped cream

Cut apple in half and carefully remove core. Frost with nut butter and top with fruit or sweet potato/pumpkin. Top with whipped cream and cinnamon.

I topped one of my "cupcakes" with a mashed sweet potato and cinnamon. The other I topped with peaches and whipped cream. I just thought these were such a cute idea. Get creative! Enjoy!

Cinnamon Sweet Potatoes

Sweet potatoes are not just for Thanksgiving! I love to make them all the time for any occasion. Sweet potatoes are very high in vitamin A and fiber (just to mention a few of their benefits.) They're great served as a side or a dessert. This recipe could be used as either!
Cinnamon Sweet Potatoes

1 large sweet potato, baked*
cinnamon to taste
salt to taste

Remove skin from sweet potato. In a large bowl, mash all ingredient with a potato masher. Warm through in microwave, if needed. Enjoy!

*Wash sweet potato and pat dry. Wrap in aluminum foil and place on a foil-lined cookie sheet. Bake at 350 for 1-2 hours (more if needed) until soft. You can bake several at a time and keep extras in the fridge!
