Soft Vegan Ginger Cookies

Hmmmm, cookies with no eggs, no wheat, no butter or oil, and no dairy... it can't be done! That was my first thought when I found this original recipe from Happy Herbivore. But as it turns out, you absolutely CAN! And let me just say that these little cookies are mighty delicious. With only 65 calories and 2 grams of fiber a piece, I think I'll go ahead and eat five or six of them thank you very much!Soft Vegan Ginger Cookies
2 c. oats (processed into flour using a blender)
2/3 c. ground flaxseed
2 T. cornstarch
2 t. baking soda
1 t. cinnamon
1 t. ground ginger
1/2 t. ground cloves
1/2 t. salt
1/2 c. refried beans (make sure the only ingredients are water, beans, and salt)
1/2 c. molasses
1/4 c. unsweetened applesauce
1/4 c. packed brown sugar
Combine all ingredients in a mixing bowl. If batter seems too runny, add some more flaxseed.

Use a cookie scoop to drop onto a greased cookie sheet.Bake at 350 F for 8-10 minutes. Cookies might seem underbaked, but that's good! They tend to dry out as they cool.Well, maybe I'm weird, but I actually really like these cookies. It's always fun to try new things and if you're vegan or have a vegan friend, these would be the perfect little treat to share. Enjoy!

Apple Pie Waffles

I am kind of embarrassed to say that I had never tried apple butter before this weekend. But I absolutely fell in love with it! It's so good!! This is what I have used it for the past two days:
This is the apple butter I used. The only ingredients are apples and apple cider. There are a lot of apple butters out there that have a lot of added sugar or corn syrup so try to find one that's less sugar and more fruit.
Apple Pie Waffles
1 recipe whole grain waffles (any kind you like)
real butter (optional)
apple butter, warm (or warm applesauce)
cinnamon
whipped cream

Atop a hot waffle, spread butter, apple butter, a sprinkle of cinnamon and top with whipped cream. It's so yummy!

I use a 10 grain waffle mix from my local supermarket, but any type will work. I like to have a nice, high-fiber waffle. Enjoy!

Fudge Brownies...(that are actually good for you!)

Today I was craving chocolate all day, but I wanted to make a healthier version of these divine treats. I ended up trying a recipe (which contains flaxseed) and I must say they are amazing. They are very ooey and gooey and fudgy. And the best part is, they are good for you!

Fudge Brownies
1/4 c. water
2 T. ground flaxseed
1/2 c. agave (or 3/4 c. sugar)
1/4 c. oil
1/4 c. unsweetened applesauce
1/4 c. buttermilk
1 t. vanilla
1/2 c. cocoa
1/2 c. whole wheat flour
1/2 t. baking powder
1/2 t. salt

Preheat oven to 350 F. Blend all ingredients until smooth. Pour in greased 8x8" pan and bake for 25-28 minutes.
Feel free to add any chopped nuts, chocolate chips, or whatever you like. I'll admit I sprinkled chopped Reeses cups on them while they were hot and then spread them around...:) They are the perfect treat for that day when you're craving chocolate (and believe me, I have plenty of those days!) Enjoy.
