Everything Waffles

Last Saturday was Everything Muffins, today it's everything waffles! :) I like hot breakfasts on Saturday mornings.
Everything Waffles
1 banana, mashed
1 avocado, mashed
1/4 c. pumpkin
2 eggs
2 T. sugar
2 c. whole wheat flour
1 t. baking soda
1 t. baking powder
1/4 t. salt
2 T. ground flaxseed
1 1/2 c. buttermilk

Combine banana, avocado, pumpkin, eggs, and sugar. Add flour, baking soda, baking powder, salt and flaxseed. Mix only a little before adding buttermilk. Whisk until smooth. (You can add more milk if your batter is too thick.) Cook in a hot, greased waffle iron and serve with toppings of choice. (We used the classic butter and syrup!) Enjoy! :)

Sesame Quinoa Granola

Mmmmm! Granola! I have a feeling I will be experimenting quite a bit with granola. I can't believe I had never made homemade granola before! It's amazing.
Sesame Quinoa Granola
1/4 c. coconut oil, melted*
1/3 c. maple syrup or honey
1 t. vanilla
1/2 t. cinnamon
3 c. oats
1/2 c. quinoa
2 T. toasted sesame seeds
salt to taste

Combine oil, syrup, vanilla and cinnamon in a bowl.
Add oats, quinoa, sesame seeds and salt. Mix well.
Spread onto and ungreased cookie sheet.
Bake at 400 F for 20-25 minutes or until deep golden brown. Cool on cookie sheet for about 10 minutes.
Transfer to an air tight container.
This granola is wonderful with fruit and milk.
*You can find coconut oil in the baking aisle near the cooking oils and shortening. If not, go ahead and use regular vegetable or canola oil.

Peach Pie Oatmeal

Peach season!!!! I'm so excited. My mom gave me a bag of sweet peaches from her tree and I made this yummy breakfast yesterday.
Peach Pie Oatmeal
1/4 c. oat bran
1/2 c. water
sprinkle salt
1 peach, sliced
1 T. pure maple syrup (or brown sugar)
sprinkle cinnamon
milk

Combine oat bran, water and salt in a microwave-safe bowl. Microwave for 1 minute. Top with peach, syrup, and cinnamon. Serve with milk. Enjoy!

Breakfast Sundae

Dessert for breakfast??? Why not? This recipe is so fun because it looks and tastes like dessert, but it's really quite healthy. The kids will be so excited when you make these breakfast sundaes! It starts with chocolate "ice cream" and then you can top it with whatever you want.
Chocolate "Ice Cream"
1 c. oat bran
2 c. water
1/2 t. salt
1/4 c. pure maple syrup (or brown sugar)
1/4 c. cocoa
1 t. vanilla
In saucepan, combine oat bran, water, and salt. Heat on high until boiling. Reduce heat to med-low and stir until thick and creamy. Remove from heat and add syrup, cocoa, and vanilla. Stir until well combined. Cool slightly and refrigerate until cold. (Mixture might seem a little runny, but it will set up as it cools.)
So here's how I assembled mine: two scoops of chocolate "ice cream"...
...topped with 1 T. peanut butter, 1 sliced banana, and whipped cream. Yum!!

Blueberry Crumble

This was breakfast today and I must say it was beyond good! It's a healthier version of traditional crumble, but you'd never know it by tasting it. The original recipe comes from yogaisyummy.net.
Blueberry Crumble
1 c. blueberries (fresh or frozen)
1/4 c. oat bran
2 T. almond butter (heaping)
dash salt
drizzle pure maple syrup (or honey)
sprinkle cinnamon

In a pie pan, microwave blueberries until slightly warm (about 1 minute, longer if using frozen.) Meanwhile, mix remaining ingredients in a bowl. Crumble oat mixture over blueberries and bake at 400 F for 10 minutes. Serve with milk. This recipe makes one or two servings (depending on how much you want...) I ate the whole thing with milk and whipped cream. It was a fantastic way to start the day! Enjoy.

Banana Bread...In a Bowl

Yum yum yum! That's what I have to say about this tasty breakfast. It tastes just like banana bread, but without the regret!! :) And aside from being delicious and healthy, it takes only minutes to prepare!
Banana Bread...In a Bowl
1/4 c. oat bran
1/2 c. water
pinch salt
1 ripe banana
1/4 c. chopped walnuts
1-2 T. pure maple syrup (or brown sugar)

In a small saucepan, cook oat bran, water and salt for about 2 minutes or until it starts to get thick. Remove from heat and pour into a bowl. Top with sliced banana, walnuts and syrup. Then drench with milk! Enjoy.

Baked Brie

Cheese is one of my all time favorite foods! I tried brie for the first time a few weeks ago and I loved it. I like it best when it's baked because it gets all ooey and gooey and melty. Mmmmm! I made this recipe for lunch today and ate it with my homemade whole wheat bread.
Baked Brie
1 round brie (about 8 oz.)
1 T. butter
2-3 T. sunflower seeds
drizzle maple syrup

Place cheese in glass pie pan. Spread with butter, sunflower seeds, and a light drizzle of maple syrup. Bake at 350 for 12-15 minutes. Serve with crackers, bread, or fruit. Enjoy!

Try using different toppings: walnuts, almonds, honey, dried fruit, whatever you have on hand!
