Blueberry Crumble

This was breakfast today and I must say it was beyond good! It's a healthier version of traditional crumble, but you'd never know it by tasting it. The original recipe comes from
Blueberry Crumble
1 c. blueberries (fresh or frozen)
1/4 c. oat bran
2 T. almond butter (heaping)
dash salt
drizzle pure maple syrup (or honey)
sprinkle cinnamon

In a pie pan, microwave blueberries until slightly warm (about 1 minute, longer if using frozen.) Meanwhile, mix remaining ingredients in a bowl. Crumble oat mixture over blueberries and bake at 400 F for 10 minutes. Serve with milk. This recipe makes one or two servings (depending on how much you want...) I ate the whole thing with milk and whipped cream. It was a fantastic way to start the day! Enjoy.

  1. So happy to see you spreading the love of Polly's crumble. It was quite amazing - I must agree, and your version looks fantastic! :)
